The Bush Series wines are an opportunity for Tom to be more experimental in the winery. They’re made in tiny quantities and will evolve and change each vintage. For each wine, Kate painted the native bush at a location of significance for the two cousins.
Artwork
A beautiful bending gum tree planted in the Tin Hut paddock, on the farm where Tom grew up, for sheep to lie under and escape the heat.
Tasting Notes
The wine was made using three methods: skin contact, barrel fermentation, and stainless steel, each part creating one of the three flavour layers of ripe fig, honeycomb, and sour rhubarb, respectively. It’s energetic and has a lick of sweetness. Peel back the layers and watch it develop with each sip.
Winemaking
The Tin Hut is an amber coloured Pinot Gris made in three ways. The first portion underwent skin contact for 8 days ofmaceration, the second was direct-pressed and fermented inneutral French oak, and the third was direct-pressed andfermented in stainless steel. Soon after fermentation, the three portions were combined, and then 30% of this was separated and spent a year in neutral red oak barriques. The Tin Hut was combined again in April 2025 and bottled unfiltered and unfined.
Vineyard
We worked with Dash Farms, which is managed by Andrew Mahony, under whom I previously worked at a vineyard on the Bellarine Peninsula. He taught me just about everything I know about managing a vineyard. The soil is made up of decomposed granite over granite bedrock, and, with over 400 meters of elevation at the site, the vines experience a nice and cool ripening period.
