Tasting Notes

Winemaking

Lovely-looking handpicked fruit was delicately whole-bunch pressed and allowed to settle overnight before being racked to neutral French barriques for wild fermentation. Full wild barrel malo and plenty of time on gross lees to fill out the mouthfeel. 6 months in oak and the resulting wine is a generous but acid-driven Fiano.

Vineyard

Grown by Chalmers, known for their Italian varieties. At their Merbein site in the Murray–Darling region, Chalmers focus on improving soil health through organic carbon to boost water retention. They use organic nutrients and mostly organic fungicides, avoid residual herbicides, and are trialling mulch to replace chemical weed control. Both Victorian vineyards are certified with Sustainable Winegrowing Australia.
