Tasting Notes

Zippy, bright green apple acid meets a full & round mouthfeel with vanilla bean and honeycomb. Like biting into an apple with honey drizzled over the top. A golden Pinot Gris that underwent barrel fermentation, full malo and some time in oak. Perfect for a spicy meal or a warmer day.

Kate’s painting of Corellas flying overhead is a dedication to the many hungry birds of the Mornington Peninsula who enjoyed their fair share of our Gris crop in 2022!

Winemaking

Pressed straight away into neutral French oak, where it fermented and aged for 4 months. The lees were stirred a number of times to fill out the mouthfeel and it remained unfiltered and unfined.
